Mommy Power Food: Chia Seed Pudding with Coconut Milk
Energy is something we could all use, no? Whether its first thing in the morning (lukewarm coffee and leftover banana from your toddler don't always cut it) or to overcome that 3pm slump, I'm always on the lookout for a healthy snack that also tastes good. 

Rather than reach for the sugar-loaded cereal bar (or candy bar... whoops!), we have a delicious Coconut Milk Chia Pudding to share! This creamy pudding is protein-packed, boasting lots of fiber and healthy fats, as well as featuring a star antioxidant, chia seeds.

Reach for this pudding for breakfast, afternoon snack or even as a healthy dessert option. It's a power food superstar and one that even your kids might like to steal bites of (if you let them... haha!). Make this pudding Sunday night and it'll be at the ready for your weekday madness. Prep your toppings in advance - I love creamy peanut butter and salted peanuts, topped with coconut flakes, blueberries and shelled pistachios or with raspberries and pumpkin seeds. I promise you Moms, this chia pudding will be your power food of choice - check out the recipe below!

Chia Seed Pudding with Peanut Butter

Coconut Milk Chia Seed Pudding

1 can coconut milk (go for the full-fat kind)
1/2 cup chia seeds
1 scoop protein powder (I'm partial to Vega Protein & Greens, Vanilla)
1 teaspoon cinnamon
1 tablespoon maple syrup

Whisk all ingredients together. Divide your pudding into individual portions, cover and refrigerate until pudding is set (overnight is best). Serve topped with garnishes of your choice!
