Reach for this pudding for breakfast, afternoon snack or even as a healthy dessert option. It's a power food superstar and one that even your kids might like to steal bites of (if you let them... haha!). Make this pudding Sunday night and it'll be at the ready for your weekday madness. Prep your toppings in advance - I love creamy peanut butter and salted peanuts, topped with coconut flakes, blueberries and shelled pistachios or with raspberries and pumpkin seeds. Coconut Milk Chia Seed Pudding
1 can coconut milk (go for the full-fat kind)
1/2 cup chia seeds
1 scoop protein powder (I'm partial to Vega Protein & Greens, Vanilla)
1 teaspoon cinnamon
1 tablespoon maple syrup
Whisk all ingredients together. Divide your pudding into individual portions, cover and refrigerate until pudding is set (overnight is best). Serve topped with garnishes of your choice!
